Vanilla Sponge

Ingredients  
Plain flour 8 oz (224g)
Custard powder 2 oz (56g)
Baking powder 2 tsp
Soda Bicarbonate 1/2 tsp
Eggs 6 pcs
Sugar 12 oz (336 g)
Vanilla Essence 1/2 tsp
Vegetable Oil 5 oz (140 g)
Oliver Kernels 20 pieces
Milk 2/3 cup

Method

1.  Sift the flour, custard, powder, baking powder and soda together twice.  Leave aside for further use.

2.  Break the eggs into a mixing bowl and beat in the sugar gradually to whisk until light and fluffy.

3.  Sift the dry ingredients again then fold into the egg batter.  Drop in the vanilla essence and leave aside for 1 hour.

4.  Warm the (vegetable oil) and fold evenly into the batter.

5.  Have ready a 9" stainless steel baking tin with a removable bottom.  Remove the bottom and place into the steamer.  Line with 2 sheets of greased paper large enough to cover the bottom and the sides of the rack.

  Steam until to 5 - 10 mins.  Decorate with olive kernels.  Cut into square pieces and serve hot.
